		<description>At the risk of being disowned, we have been buying Buffalo, or as my young nephew would call the beasts, Bison. It is quite a bit leaner than beef and is every bit as tastey. They're pretty young so after ignoring the butchers phone calls for cutting instructions for a couple of weeks the suckers are really, really tender too. The price on the rail is quite comparable to beef and the yield is about 60%.</description>
